Ingredients
- 12 (6-inch) corn tortillas
- 1½ teaspoons olive oil
- 2 medium zucchinis, chopped
- 2 plum tomatoes, chopped
- 1 medium red onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 jalapeño peppers, minced (with seeds)
- 1 cup frozen corn kernels, thawed
- 4 scallions, minced
- ¼ cup chopped cilantro (plus extra for garnish)
- ½ teaspoon salt
- 1½ cups grated pepper jack cheese
- ¼ cup fat-free sour cream
Instructions
- Bake tortillas. Preheat oven to 375°F. Place tortillas on baking sheets and bake for about 10 minutes, or until crisp.
- Cook vegetables. While tortillas bake, heat olive oil in a large skillet over medium-high heat. Add zucchini, tomatoes, onion, bell peppers, corn, and scallions. Sauté for about 4 minutes.
- Drain and season. Drain excess liquid using a mesh strainer, then return vegetables to the pan. Stir in cilantro and salt.
- Assemble towers. Place one baked tortilla on a plate. Add about 3 tablespoons cheese and a portion of the vegetable mixture. Top with another tortilla and repeat layering. Finish with a third tortilla on top.
- Serve. Top each tower with sour cream and garnish with fresh cilantro if desired.
