Vegetable Frittata

Ingredients
- 8 large eggs
- ½ cup milk
- ½ tsp. salt, divided
- ½ tsp. pepper, divided
- 1 cup shredded sharp cheddar cheese, divided
- 1 Tbsp. olive oil
- 2 garlic cloves, minced
- ½ red onion, diced
- 1 small sweet potato, chopped
- 1 small zucchini, chopped
- 1 medium red pepper, chopped
- 2 cups baby spinach
Instructions
- Preheat oven. Preheat oven to 375°F.
- Prepare egg mixture. In a medium bowl, whisk together eggs, milk, ¼ tsp. salt, and ¼ tsp. pepper. Stir in ¾ cup cheese and set aside.
- Sauté aromatics. Spray a 12-inch oven-safe skillet with cooking spray. Add olive oil and heat over medium heat. Add garlic and sauté for 30–60 seconds, being careful not to burn.
- Cook vegetables. Add red onion and sweet potatoes. Cook for 5 minutes, stirring occasionally, until slightly softened. Add zucchini and red pepper, season with remaining salt and pepper, and cook another 5 minutes. Stir in spinach and cook until wilted.
- Add eggs. Pour the egg mixture over the vegetables. Gently scrape the sides to ensure even distribution. Cook without stirring for 2–3 minutes until edges begin to set. Sprinkle remaining cheese on top.
- Bake. Transfer skillet to oven and bake for 22–26 minutes, or until the frittata is set and the center no longer wobbles.
- Cool and serve. Let cool for 10 minutes before slicing and serving.
