Ingredients
- 2 tablespoons butter
- 1 tablespoon garlic, minced
- 1 pound ground turkey
- 1.5 tablespoons ground cumin
- 2 teaspoons chili powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 cup onion, diced
- 1 yellow bell pepper, diced
- 3 small or 2 large sweet potatoes, peeled and diced small (about 3½ cups)
- ¾ cup chicken broth
- ½ cup mozzarella cheese, shredded
- ½ cup cheddar cheese, shredded
- ¼ cup cilantro, chopped
Instructions
- Cook turkey. In a large skillet, heat butter over medium heat. Add garlic and cook for about 1 minute. Add ground turkey and cook until browned.
- Season. Stir in cumin, chili powder, salt, and pepper, mixing well to coat the turkey.
- Add vegetables. Add onion and bell pepper and cook for 3–4 minutes until slightly softened.
- Cook sweet potatoes. Add diced sweet potatoes and chicken broth. Stir, cover, and cook for 6–8 minutes until sweet potatoes begin to soften.
- Finish and serve. Remove lid, adjust seasoning if needed, and sprinkle shredded mozzarella and cheddar cheese over the top. Remove from heat and garnish with fresh cilantro before serving.
