Turkey and Zucchini Layered Lasagna

Ingredients
- 1 (16-ounce) package extra lean ground turkey breast
- 2 cloves garlic, minced
- 1 (15-ounce) can tomato sauce
- 1 carrot, shredded
- 1½ teaspoons dried oregano
- 1½ teaspoons dried basil
- 1½ teaspoons fennel seeds
- 1 pound zucchini (about 3 medium), sliced lengthwise into ¼-inch thick slices
- 1 cup part-skim ricotta cheese, divided
- ½ cup grated Parmesan cheese, divided
- 1 cup shredded mozzarella cheese, divided
Instructions
- Preheat oven. Preheat oven to 350°F. Lightly coat a 9-inch square baking dish with cooking spray.
- Cook turkey. Heat a skillet over medium-high heat and cook ground turkey, breaking it up as it cooks, for 14–16 minutes or until fully cooked (165°F internal temperature).
- Make sauce. Add garlic, tomato sauce, shredded carrot, oregano, basil, and fennel seeds to the skillet. Bring to a boil, then remove from heat.
- Layer ingredients. Place one-third of the zucchini slices on the bottom of the baking dish. Spread half of the ricotta, mozzarella, and Parmesan cheeses over the zucchini. Add half of the turkey mixture.
- Repeat layers. Repeat layering process, finishing with zucchini and remaining mozzarella cheese on top.
- Bake. Bake uncovered for 45 minutes, or until bubbly and cheese is lightly browned.
- Serve. Let cool slightly before slicing and serving.
