Ingredients

  • 1 (16-ounce) package extra lean ground turkey breast
  • 2 cloves garlic, minced
  • 1 (15-ounce) can tomato sauce
  • 1 carrot, shredded
  • 1½ teaspoons dried oregano
  • 1½ teaspoons dried basil
  • 1½ teaspoons fennel seeds
  • 1 pound zucchini (about 3 medium), sliced lengthwise into ¼-inch thick slices
  • 1 cup part-skim ricotta cheese, divided
  • ½ cup grated Parmesan cheese, divided
  • 1 cup shredded mozzarella cheese, divided

Instructions

  1. Preheat oven. Preheat oven to 350°F. Lightly coat a 9-inch square baking dish with cooking spray.
  2. Cook turkey. Heat a skillet over medium-high heat and cook ground turkey, breaking it up as it cooks, for 14–16 minutes or until fully cooked (165°F internal temperature).
  3. Make sauce. Add garlic, tomato sauce, shredded carrot, oregano, basil, and fennel seeds to the skillet. Bring to a boil, then remove from heat.
  4. Layer ingredients. Place one-third of the zucchini slices on the bottom of the baking dish. Spread half of the ricotta, mozzarella, and Parmesan cheeses over the zucchini. Add half of the turkey mixture.
  5. Repeat layers. Repeat layering process, finishing with zucchini and remaining mozzarella cheese on top.
  6. Bake. Bake uncovered for 45 minutes, or until bubbly and cheese is lightly browned.
  7. Serve. Let cool slightly before slicing and serving.
