Ingredients

  • 2 slices multigrain bread
  • 2 ounces brie cheese, thinly sliced
  • 1⁄2 cup baby spinach leaves, stems removed
  • 3 strawberries, stems removed and thinly sliced
  • 1 tablespoon basil pesto, divided
  • 1 tablespoon butter, softened

Instructions

  1. Heat pan. Preheat a nonstick or cast-iron pan over medium heat.
  2. Assemble sandwich. Spread pesto evenly on each slice of bread. Layer brie cheese, strawberry slices, and spinach leaves on one slice.
  3. Close and press. Place the second slice of bread on top and press gently to hold everything together.
  4. Butter and cook. Spread butter on the top slice of bread, then place the sandwich butter-side down in the pan.
  5. Grill. Cook for 3–4 minutes or until lightly browned. Adjust heat as needed to avoid burning. Butter the top side, flip, and cook another 3–4 minutes until golden brown and the cheese is melted.
