Ingredients

  • 1 clove garlic, crushed
  • 1/3 cup ricotta cheese
  • 1/4 cup frozen chopped spinach, thawed
  • 2 tablespoons grated Parmesan cheese
  • Sea salt and cracked pepper, to taste
  • Dried Italian mixed herbs, to taste
  • 1/4 cup grated light mozzarella cheese (or fresh mozzarella, thinly sliced)
  • 4 thick slices sourdough bread
  • 1 tablespoon butter
  • 1/2 cup pasta sauce

Instructions

  1. Cook garlic. In a medium skillet, cook the crushed garlic in a small amount of olive oil or cooking spray over medium-high heat for 30 to 60 seconds, until fragrant. Remove from heat.
  2. Make filling. In a small bowl, combine cooked garlic, ricotta cheese, spinach, Parmesan cheese, salt, pepper, and Italian herbs. Mix well.
  3. Prep bread. Spread butter on one side of each slice of bread.
  4. Assemble sandwiches. Divide the ricotta mixture between two slices of bread, spreading it on the unbuttered side. Add mozzarella cheese on top, then close with the remaining bread slices, buttered side facing out.
  5. Cook sandwiches. Return skillet to medium heat. Cook sandwiches for 3 to 4 minutes per side, flipping once, until bread is golden brown and cheese is melted.
  6. Serve. Sprinkle with extra Italian herbs if desired and serve with warm pasta sauce for dipping.
