Ingredients

  • 1¾ cups rolled oats (quick-cooking oats work too), divided
  • 6 cups peeled and sliced apples
  • ½ teaspoon salt, divided
  • 1 teaspoon ground cinnamon, divided
  • ¼ cup + 1/3 cup packed brown sugar
  • 6 Tablespoons unsalted butter, slightly softened and divided
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat oven. Preheat oven to 375°F. Grease an 8 x 8-inch baking dish with butter or non-stick spray.
  2. Make oat flour. Add 1 cup of oats to a food processor and blend until it resembles flour. Set aside.
  3. Prepare apples. In a bowl, toss apples with 2 tablespoons oat flour, ¼ teaspoon salt, ½ teaspoon cinnamon, and ¼ cup brown sugar. Add 2 tablespoons butter (cut into cubes) and toss. Transfer mixture to prepared baking dish.
  4. Make topping. In a medium bowl, combine remaining oat flour, oats, salt, brown sugar, and cinnamon. Use a fork to cut in remaining butter until mixture is crumbly.
  5. Assemble and bake. Sprinkle topping evenly over apples. Bake for about 45 minutes, or until golden brown and crisp.
  6. Serve. Serve warm with vanilla ice cream.
