Ingredients

  • 16 ounces extra sharp cheddar cheese, shredded
  • 1 (8 oz.) package cream cheese, softened
  • 1 (8 oz.) container chive and onion cream cheese
  • 2 teaspoons paprika
  • ½ teaspoon ground red pepper
  • 1 bell pepper (for stem)
  • Whole grain crackers (for serving)

Instructions

  1. Mix ingredients. In a bowl, combine shredded cheddar, cream cheese, chive and onion cream cheese, paprika, and red pepper. Mix until well blended.
  2. Chill. Cover and refrigerate for at least 4 hours, or until firm enough to shape.
  3. Shape. Form the mixture into a ball and shape it to resemble a pumpkin.
  4. Add stem. Cut the top of a bell pepper and press it into the top of the cheese ball to create a pumpkin stem.
  5. Serve. Serve with whole grain crackers.
