Ooey Gooey Butter Cookies

Ingredients
- ½ cup salted butter, softened
- 1 (8 oz.) package cream cheese, softened
- 1½ cups granulated sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 2¼ cups all-purpose flour
- ½ cup confectioners’ sugar
- 3 teaspoons baking powder
- ½ cup confectioners’ sugar (for rolling)
Instructions
- Preheat oven. Preheat oven to 350°F.
- Cream ingredients. In a large bowl, use a hand mixer to beat butter, cream cheese, and granulated sugar until smooth and well combined.
- Add egg and vanilla. Mix in egg and vanilla extract until incorporated.
- Add dry ingredients. Gradually add flour, baking powder, and ½ cup confectioners’ sugar. Mix on low speed until dough forms.
- Shape cookies. Using a 2-tablespoon scoop, portion dough and roll each ball in confectioners’ sugar. Place about 6 cookies per parchment-lined baking sheet.
- Bake. Bake for 8–11 minutes, or until cookies no longer appear wet on top.
- Cool. Let cookies rest for about 5 minutes, then transfer to wire racks to cool completely.
