Mini Frittatas

Ingredients
- Nonstick vegetable oil cooking spray
- 8 large eggs
- ½ cup low-fat milk
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon salt
- 4 ounces thinly sliced ham, chopped
- 1/3 cup grated Parmesan cheese
- 2 tablespoons chopped parsley
Instructions
- Preheat oven. Preheat oven to 375°F.
- Prepare pans. Spray two mini muffin tins (24 cups each) with nonstick cooking spray.
- Mix ingredients. In a large bowl, whisk together eggs, milk, pepper, and salt. Stir in chopped ham, Parmesan cheese, and parsley.
- Fill cups. Pour egg mixture into muffin cups, filling almost to the top.
- Bake. Bake for 8–10 minutes, or until the frittatas are puffed and just set in the center.
- Remove and serve. Use a spatula to gently loosen and remove frittatas from the pan. Serve immediately.
