Ingredients

  • Nonstick vegetable oil cooking spray
  • 8 large eggs
  • ½ cup low-fat milk
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon salt
  • 4 ounces thinly sliced ham, chopped
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons chopped parsley

Instructions

  1. Preheat oven. Preheat oven to 375°F.
  2. Prepare pans. Spray two mini muffin tins (24 cups each) with nonstick cooking spray.
  3. Mix ingredients. In a large bowl, whisk together eggs, milk, pepper, and salt. Stir in chopped ham, Parmesan cheese, and parsley.
  4. Fill cups. Pour egg mixture into muffin cups, filling almost to the top.
  5. Bake. Bake for 8–10 minutes, or until the frittatas are puffed and just set in the center.
  6. Remove and serve. Use a spatula to gently loosen and remove frittatas from the pan. Serve immediately.
