Ingredients
Taco Shells
- 2 cups all-purpose flour
- 3 Tbsp sugar
- 1½ tsp baking powder
- 1½ tsp baking soda
- 1¼ tsp kosher salt
- 2 cups milk
- 2 large eggs
- 3 Tbsp unsalted butter, melted
- 1 Tbsp salted butter (for cooking)
Filling
- 6 scoops Neapolitan ice cream
Toppings
- Chocolate syrup
- Crushed nuts
- Fresh strawberries
- Whipped cream
Instructions
Make the Taco Shells
- Mix dry ingredients. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Add wet ingredients. Make a well in the center and pour in milk, eggs, and melted butter. Whisk from the center outward until combined. (Do not overmix; batter may be slightly lumpy.) Adjust consistency with a little extra milk if needed.
- Heat skillet. Warm a non-stick skillet or griddle over low heat for about 5 minutes. Add salted butter and increase heat to medium-low.
- Cook shells. Pour about 1/3 cup batter into the skillet. Cook until bubbles form and the bottom is lightly browned (2–4 minutes), then flip and cook the other side.
- Shape tacos. Remove from heat and drape over a wire rack to form a taco shape. Let cool completely.
Assemble the Dessert
- Fill shells. Spoon ice cream into each cooled taco shell.
- Add toppings. Top with strawberries, chocolate syrup, whipped cream, and nuts.
- Serve. Enjoy immediately.
