  • 3 garlic cloves, minced
  • 2 cups shredded smoked Gouda cheese
  • Chives and smoked paprika for garnish

Instructions

  1. Make the base. In a large saucepan, melt butter over medium heat. Stir in flour, pepper, and allspice until smooth.
  2. Add liquids. Gradually whisk in chicken broth, heavy cream, and milk. Bring to a boil.
  3. Add mushrooms and garlic. Stir in sliced mushrooms and minced garlic. Reduce heat.
  4. Simmer. Cook for 5 to 6 minutes, or until mushrooms are tender.
  5. Add cheese. Stir in smoked Gouda cheese and cook until fully melted and smooth.
  6. Serve. Ladle into bowls and garnish with chives and smoked paprika if desired.
