Ingredients
- ¼ cup butter
- 1 bunch green onions
- 1 white onion
- 2 quarts water
- 3 large potatoes, chopped
- 2 large carrots, chopped
- 1 bunch fresh asparagus, chopped
- ⅓ cup uncooked long-grain white rice
- 4 teaspoons salt
- ½ pound fresh spinach
- 1 cup milk
Instructions
- Sauté onions. Melt butter in a large pot over medium heat. Add green onions and white onion, cooking until tender.
- Add vegetables and rice. Pour in water and stir in potatoes, carrots, asparagus, and rice. Season with salt.
- Simmer. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until vegetables and rice are tender.
- Finish with dairy. Stir in spinach and milk. Continue cooking for about 5 minutes until spinach is wilted and soup is heated through.
- Serve. Ladle into bowls and serve warm.
