French Spring Soup

Ingredients

  • ¼ cup butter
  • 1 bunch green onions
  • 1 white onion
  • 2 quarts water
  • 3 large potatoes, chopped
  • 2 large carrots, chopped
  • 1 bunch fresh asparagus, chopped
  • ⅓ cup uncooked long-grain white rice
  • 4 teaspoons salt
  • ½ pound fresh spinach
  • 1 cup milk

Instructions

  1. Sauté onions. Melt butter in a large pot over medium heat. Add green onions and white onion, cooking until tender.
  2. Add vegetables and rice. Pour in water and stir in potatoes, carrots, asparagus, and rice. Season with salt.
  3. Simmer. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until vegetables and rice are tender.
  4. Finish with dairy. Stir in spinach and milk. Continue cooking for about 5 minutes until spinach is wilted and soup is heated through.
  5. Serve. Ladle into bowls and serve warm.
