Ingredients
- 6 large eggs
- 1 cup cottage cheese
- ¼ cup milk
- ½ cup cheddar cheese
- ¼ tsp. salt
- ¼ tsp. pepper
- 1 cup fresh baby spinach, chopped
- 2 small tomatoes, seeded and diced
Instructions
- Preheat oven. Preheat oven to 350°F. Coat a muffin pan with cooking spray and set aside.
- Blend mixture. Add eggs, cottage cheese, milk, cheddar cheese, salt, and pepper to a food processor or blender. Blend until smooth.
- Add vegetables. Place about 1 tablespoon of spinach and 1 tablespoon of diced tomatoes into each muffin cup.
- Fill cups. Pour the egg mixture into each cup, ensuring the vegetables are covered.
- Bake. Bake for 25 minutes or until the egg mixture is fully set.
- Serve. Let cool slightly before serving. Enjoy warm or store for later.
