Broccoli Cheddar Soup

Ingredients

  • 1 Tbsp butter
  • ½ onion, chopped
  • ¼ cup melted butter
  • ¼ cup flour
  • 2 cups low-fat milk
  • 2 cups chicken stock
  • 1½ cups broccoli florets, coarsely chopped
  • 1 cup matchstick-cut carrots
  • 1 stalk celery, thinly sliced
  • 2½ cups shredded sharp Cheddar cheese

Instructions

  1. Sauté onion. Melt 1 Tbsp butter in a skillet over medium-high heat. Add onion and cook until translucent.
  2. Make roux. In a large saucepan, whisk melted butter and flour over medium heat. Cook while whisking, adding 1–2 Tbsp milk to smooth the mixture.
  3. Add liquids. Gradually pour in remaining milk while whisking. Stir in chicken stock and bring to a simmer. Cook for about 20 minutes until thickened.
  4. Add vegetables. Stir in broccoli, carrots, sautéed onion, and celery. Simmer for 20 minutes or until vegetables are tender.
  5. Add cheese. Stir in shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.
  6. Serve. Enjoy warm.
