Ingredients
- 1 Tbsp butter
- ½ onion, chopped
- ¼ cup melted butter
- ¼ cup flour
- 2 cups low-fat milk
- 2 cups chicken stock
- 1½ cups broccoli florets, coarsely chopped
- 1 cup matchstick-cut carrots
- 1 stalk celery, thinly sliced
- 2½ cups shredded sharp Cheddar cheese
Instructions
- Sauté onion. Melt 1 Tbsp butter in a skillet over medium-high heat. Add onion and cook until translucent.
- Make roux. In a large saucepan, whisk melted butter and flour over medium heat. Cook while whisking, adding 1–2 Tbsp milk to smooth the mixture.
- Add liquids. Gradually pour in remaining milk while whisking. Stir in chicken stock and bring to a simmer. Cook for about 20 minutes until thickened.
- Add vegetables. Stir in broccoli, carrots, sautéed onion, and celery. Simmer for 20 minutes or until vegetables are tender.
- Add cheese. Stir in shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.
- Serve. Enjoy warm.
