Breakfast Quesadillas

Ingredients
- 2 Tbsp butter + additional for tortillas
- 2 green onions, sliced
- ½ medium jalapeño pepper, diced
- 4 large eggs
- ¼ cup milk
- ¼ tsp ground cumin
- ¼ tsp salt
- 1/8 tsp ground black pepper
- 4 (8-inch) tortillas
- 1 cup shredded pepper Jack cheese
- ½ cup salsa
- ¼ cup sour cream
Instructions
- Sauté vegetables. In a large pan, melt 2 Tbsp butter over medium heat. Add green onions and jalapeño and cook until softened.
- Prepare eggs. In a bowl, whisk together eggs, milk, and cumin.
- Cook eggs. Pour egg mixture into the pan and cook until eggs are set. Remove from heat and stir in salt and pepper.
- Assemble quesadillas. Melt butter on a griddle over medium heat. Place tortillas on the griddle and layer with half the cheese, egg mixture, remaining cheese, and top tortillas.
- Cook. Cook until tortillas are golden brown, flipping once, until cheese is melted.
- Serve. Cut into quarters and serve with salsa and sour cream.
